Ingredients:

12 oz Wacky Mac®® Veggie Spirals
1 lb pork tenderloin, grilled, cut into ½-inch dice
2 large peaches, diced
1 1/2 tsps Dijon mustard
2 Tbsps canola oil
1 1/2 Tbsps white wine vinegar
2 tsps fresh sage, chopped
1/2 tsp salt
1/4 tsp ground black pepper
1 large Belgian endive

Cooking Directions:

1. Prepare Wacky Mac® according to package directions and rinse.
2. Place WACKY MAC in large bowl. Add pork and peaches.

3. In a small bowl, stir together mustard, oil, vinegar, sage, salt and pepper.

4. Pour over WACKY MAC mixture. Toss gently but well.

5. Spoon into large shallow serving bowl. Separate endive leaves and stand up around inside edge of bowl.
