Ingredients:

12 oz Wacky Mac®® Veggie Spirals
1 Tbsp olive oil
1 small onion, thinly sliced
1 large garlic clove, minced
1 cup (about 8 oz.) sliced fresh mushrooms
12 oz cooked Italian sausage links, sliced
1/2 tsp dried oregano leaves, crushed
1/8 tsp dried red pepper flakes
3 medium plum tomatoes, seeded and diced
1/4 cup dry white wine
1/4 tsp salt
1/4 tsp ground black pepper
2 oz thinly sliced baby fresh mozzarella balls

Cooking Directions:

1. Prepare Wacky Mac® according to package directions.  

2.  Heat oil in very large nonstick skillet over medium heat. Add onion, garlic and mushrooms. Cook for 7 to 10 minutes, stirring frequently, or until vegetables are tender.

3. Stir in sausage, oregano and red pepper flakes. Brown sausage for 2 to 3 minutes, stirring occasionally.

4. Add tomatoes and wine. Cook over medium-high heat for 2 minutes, or until tomatoes are pulpy, stirring frequently.

5. Season with salt and pepper. Stir in cooked Wacky Mac® and heat through over medium heat.

6. Scatter mozzarella on top. Heat through for 1 to 2 minutes.

Note: Find fresh small mozzarella balls in containers in the deli case of better supermarkets. If desired, substitute ½ cup shredded regular mozzarella.
